How to Cook Sambas Spicy Porridge From Borneo (Indonesian Recipes From Borneo)

Today unique foods will share about Borneo's Food. Well yesterday we had talked about porridge in Bali. Today we will take a look some of food from Borneo. The recipe of these foods are different from mengguh porridge. Borneo has special spicy porridge then it called SAMBAS porridge, which is very spicy  taste and delicious. it would be most delicious if you consume it one the cool weather. 


Ingredients:


  • 1 kilos of rice (washed)
  • 1 grain of coconut (grated and roasted)
  • Black pepper
  • 1 tablespoon of coriander
  • 3 cloves of garlic
  • 5 grains of onion
  • 1 teaspoon of cumin
  • 1 teaspoon of aniseed
  • 5 red peppers
  • Water at sufficiently to make porridge
  • 250 grams of meat
 

 Additional vegetables for Sambas Porridge:


  • 2 bunches of watercress (trimmed)
  • 1 bunch green beans, (trimmed 1/2cm)
  • 1 ounce of bean sprouts
  • 1 ounce of fried peanut
  • 1 ounce of peas
  • 3 ferns (cleaned)
  • 1 cup of bamboo shoot (boiled till tender)
  • 2 squashes (peeled and cut in 1/2cm)
  • 1 turmeric leaves
  • 3 red sweet potatoes
  • ½ pounds of cabbage (sliced)
  • 1 tofu (crisp cut)
  • 1 ounce of straw mushrooms
  • 3 tablespoons of butter

How to cook The Sambas Spicy Porridge:

  1. Wash the rice then drain, and then roast the rice until yellow, add pepper, cumin, anise coriander and roasted until cooked.
  2. Roasted grated coconut till yellow then mashed.
  3. Washed and boiled meat half cooked. And then add the rice after it has been roasted with all of spices, and add the water, so it could be porridge.
  4. Heat the butter, and then sauté onion and garlic until smell fragrant then add to porridge. Enter the sweet potato that has been cut to the porridge.
  5. Put vegetables on the porridge then stir until vegetables are cooked/well done.
Serve during it hot completely with the sauce, lemon and soy sauce.  Enjoy your Spicy Porridge from Borneo. ;)

Porridge from Bali or Bubuh Mengguh Bali’s Special Food and How to make it

Bali has unique culture, habit, and good religion is Hinduism. Not only that were available in Bali, today I will give you our Bali recipe for making “Mengguh porridge”.
Mengguh Porridge

Did you know about Bali? Well Bali is the most beautiful island in Indonesia.  Bali has unique culture, habit, and good religion is Hinduism. Not only that were available in Bali, today I will give you our Bali recipe for making “Mengguh porridge”. It’s little bit complicated, but don’t worry. Once you have tried for it, next you’ll be master on it.
This food or Mengguh porridge come from Tejakula region, Buleleng Regency in Bali Indonesia. Completely hot and full of good flavor will make you want have some more. Moreover, you had better to consume it where you were in cool weather.  

Ingredients:

  • 200grams of rice (wash the rice)
  • 1200cc water
  • 2tsp of salt
  • 2 bay leaves
  • 500cc coconut milk
  • 500grams chicken breast
  • 200grams green beans (sliced it for about 1cm)
  • 100grams of peanut
  • Onion (that we have fried)

Spices that you should grind first:

  • 6 red onions
  • 4 cloves garlic
  • 2 red chilies
  • 2 cm turmeric that have grilled
  • 4 pieces of hazelnut
  • ½ or a half of tsp pepper
  • 1tsp coriander
  • Salt according your taste

Material for Combination in Indonesia called it “URAP”

  • 100grams coconut (grated)
  • 200gams green bean then cut it into 4cm
  • 2 cloves garlic
  • 2 red chilies
  • 1/2tsp shrimp paste (TERASI)
  • 2cm greater galingale
  • 2tsp brown sugar
  • Two lime leaves
  • Salt

How to cook Mengguh porridge :


  1. Heat 2 spoons of oil, then sauté the spices until fragrant or smell good. Enter the chicken bay leaves, galangal, and bouillon powder, add 500cc of water.
  2. Cook until chicken is well done and flavors then lift it.
  3. Take the chicken from the sauce or its soup.
  4. Boil the rice until soft
  5. Add coconut milk, salt, and bay leaves.
  6. Put the beans. Next Cook until beans cooked/well done then lifts it.

To make addition for Mengguh porridge “Urap”


  1. Puree all the ingredients of urap.
  2. Add the grated coconut.
  3. Steam the spices until done.
  4. Mix the seasonings with the beans.
  5. The last, Serve in a bowel of porridge, completed with fried peanuts, beans and urap then don’t forget to sprinkle the fried onions on it.
